Indulging in some finger-licking good pork vindalho tempered with shots of feni, while he takes in a bit of sun and sand, world celebrity Chef, David Rocco is impressed with Goa’s unique culture and cuisine. “You’ll have a special place in India.  Goa’s cuisine is distinctly different with its Mediterranean influence. The flavours here are more European, yet with a unique blend,” Rocco enthuses.  Terming the pork vindalho and the local sausage fry with pao as ‘simply fanstastic’, Rocco is equally enamoured with Goa’s varied seafood dishes and curries. “I am learning about the various flavours, exploring the culture and its people and enjoying myself as well,” avers this Italian gentleman, whose demeanour is as unaffected as his love for simple clean flavours and in India - street food.
