It is indeed heartening to know through Herald Cafe 27/09 that Dr Solomon Rajkumar, a Keralite scientist, at ICAR, is working on a thesis on Goan pork sausages for a Geographical Indication [GI] tag, which implies that our chouriso will be available worldwide under the Intellectual Property Rights (IPR), with exclusive royalty to Goan traditional pork sausage makers.
There are two popular and appetising variants of this culinary delight available, one is the sun baked variant and the other the smoked ones, and both are equally appetising to the palate. As Goan pork sausages are scientifically and hygienically prepared with toddy vinegar as baseline marinating agent, they are unique to Goa and will beat all other international brands hollow as is evident by their demand to the Gulf and European countries by food processing company Costa & Co., whose order book for supply of the product is immense. The only known international sausage brand available across geographies is the popular German sausage, nick-named after the Germans.
The research of Dr Solomon comes close on the heels of another GI tag attained for our Cashew Feni which is now rubbing shoulders with international scotch whiskey brands of the like of Johnny Walker, Jack Daniels, Glen Fiddish etc, not forgetting the ever popular one-shot Mexican Tequila.
The ubiquitous culinary delight known as chouriso or linguica marinated in toddy vinegar was adapted from the Portuguese in the local cuisine and has since been a favorite as an ethnic delight.
