Keeping it cool

The chef is akin to a conductor of a philharmonic orchestra. His every move dictates the tone and tenor of a restaurant. Navtej Sawhney of Athurs Theme at Candolim spoke to AJIT JOHN about how he manages to maintain his cool in a crazy world

Like many professionals in the restaurant business, Navtej wakes up at 10 o clock and then heads over to the restaurant located at Candolim. Now in the business for well over two decades he now does not have to go to the market early in the morning to purchase fresh ingredients.  He still sleeps at 3.30 am but makes it to the kitchen to cook, try new recipes and create new dishes.   
The odd working hours do not guarantee a healthy body. Navtej works out in the afternoon. A fan of cross fit running he was ranked India No-5 at one point of time. He trains 6 days a week.  
His taste in music runs towards retro meaning he is a fan of Led Zep, Guns and Roses, Metallica and Dire Straits. In terms of his reading he sticks to learning about new developments in cooking. Everything, he said had changed from the time he started cooking. 
Given his schedule he prefers watching his movies on a laptop. A movie, he smiled and said was usually watched in 2 or 3 parts. A fan of action movies he prefers watching English movies though he would watch the odd Hindi movie too. 
Like any chef with exacting tastes, he likes the Bang Bang Chicken at Fat panda which is located next to his outlet. In Mumbai he loves Churchills located near Leopold. His career has taken him all over the world and he likes to take a break once a year.  He recently went holidaying in Prague. With the exception of Australia and New Zealand, he has drunk the water from every other region. He intends to rectify this by visiting Australia shortly. The next five years he laughed and said would be all about expansion and more fun.
