Bruschetta

Bruschetta is an antipasti, which is basically a kind of open salad, topped over a grilled or toasted piece of bread. This popular Italian appetiser offers an instant burst of flavours through every bite. Check out my version of the all Italian Bruschetta!

Tomato (chopped) – 1
cup

Garlic (chopped) – 4
nos.

Basil – 6 large leaves

Green Olives – 4
nos.

Black Olives – 4
nos.

Balsamic Vinegar – 3
tsp

Olive oil – 3 tsp

Oregano – ¼ tsp

Parmesan cheese – 1
tsp

Salt and
pepper – to taste

Parsley (chopped) – for garnish

Baguette – 4 slices

Method:

1) Chop
all the vegetables and keep
aside.

2) For the dressing, in a bowl,
mix together the olive oil, balsamic vinegar, chopped garlic and
oregano. Mix well.

3) For the tomato mix, in a large
bowl mix together the chopped tomatoes, basil, green olives and
black olives. Add in the dressing, give a final mix and
keep aside.

4) Cut the baguette diagonally and
toast in an oven till crisp. Once done, spoon the tomato mix on each
of the slices.

5) Finish off by sprinkling some
grated parmesan and chopped parsley.
