Liquid nitrogen banned in food, drinks

PANJIM: The use of liquid nitrogen in food and drinks will now invite punishment from Food & Drugs Administration (FDA) with FSSAI instructing FDAs across the country to ensure its ban in consumable products.
“It has come to the notice of FSSAI that a number of restaurants have started flushing or mixing ‘liquid nitrogen’ with food and drinks. However, public at large through social media or news reports have raised their concern about safety of consumption of such food products treated with ‘liquid nitrogen’. All commissioners of food safety of all states/UTs are directed to ensure that no food product is treated with it specifically in food establishments such as restaurants /hotels/dhabas/ice cream parlours/bars or any other similar joints/premises,” the order states.
FSSAI cited how liquid nitrogen laced food and/or drinks may cause damage to the digestive system including oral organs, stomach and intestines.
It has also instructed FDAs to impose action against the defaulters stating that the ingredient/addictive is not permitted under the Food Safety and Standards (Food Products Standards & Food Addictives) Regulations 2011.
