Fine dining is its hallmark, and concept cuisine, its watchword! Ever since it opened doors three years ago in the heart of Margao at Garden View Apartments, near the Post Office, Martins Multicuisine Restaurant & Bar has been wooing customers with its global concept menu paired with an unbeatable ambience and service.
“We basically offer a two-core cuisine category – Goan and Global. The Goan cuisine sticks to the traditional, classic flavours of Goa, whereas for the global cuisine, for which we have made a name, we do a lot of concept cuisine – some of which are new to Goa, others, to India, and yet others, to Asia,” avers partner Cassie Martins, who runs the business aspects of the restaurant while his brother Larry oversees the kitchen.
Elaborating on the various concepts, he points out to the popular steak-n-stone. ‘It’s basically done on a volcanic stone brought from South America. It’s done at the table, either by the customer if they so choose to do it or assisted by our staff. Another concept is cooking fish (either local or salmon) on cedar wood imported from Canada. The fish imbibes the smokey-wood flavour. Similarly, we make the Spanish chorizo in-house. All the ingredients from paprika and other herbs are imported from Spain. The sausages are cooked in a custom-made smoker with wood chips,” explains Cassie who does a considerable bit of travelling in search of the perfect condiment or ingredient. On the anvil, plans are afoot to include meat cooked on red wine barrel staves on the menu. Imported wines from Chile to Australia, as well as trending and desi cocktails with a bit of twist add to the flavours of the meals and the ambience.
While the restaurant ascribes to the essence of fine dining, it’s one with an affordable tag nonetheless. “Eighty per cent of our clients are repeat clients,” reveals Cassie, of the two-tier restaurant which offers a posh, air-conditioned set-up on the ground floor and the open air balcony on the top which offers one an open view of the city and the verdant municipal garden below.
To increase customer as well as brand value, the restaurant has been organising a major event in the past couple of years. “In the first year we held a wine tasting session. This year we switched to Noite de Portuguesa with Fado performance by Nadia Rebelo, complimented with authentic and classic Portuguese cuisine. “In fact, the Consul General of Portugal in India, Dr Rui Carvalho Baceira, a connoisseur of food himself, was actively involved in recommendations to the menu,” acknowledges Cassie. The success of the night has prompted them to to hold it on a regular basis. “ We are likely to have a Portuguese nite either bi-monthly or monthly in addition to our regular Saturday evenings of classical alto-sax jazz recitals.
