Dr R Solomon Rajkumar, a scientist at ICAR-Central Coastal Agricultural Research Institute, is currently working on his thesis for a doctorate degree on the Goan pork sausage. This is the first study on these sausages, a traditional Portuguese recipe that was adapted to Goa with toddy vinegar. Through the publishing of his research papers, Dr Solomon is hoping to attain a GI tag for the sausages
