ALDONA: Lourenco Da Piedade Batista, a seasoned cook hailing from Maina Vaddo, Aldona, has been tantalising taste buds with traditional Goan dishes for over three decades. At 63 years young, Lourenco’s culinary journey began under the tutelage of Dona Rosa’s esteemed
cooking firm, where he honed his skills for 17 years before venturing out on his own.
Since 1995, Lourenco has been weaving magic in the kitchen,
infusing every dish with a blend of natural ingredients and flavourful essence. For him, cooking isn’t just a task; it’s a responsibility to ensure that every bite leaves his patrons happy
and satisfied.
“My main focus in cooking is on using natural ingredients and ensuring that the food I prepare is flavorful and
enjoyable.
Food plays a vital role in any function, whether it’s a wedding, birthday bash, or any celebration, adding to the fun and enjoyment. When I cook, I consider it my responsibility to provide the best possible culinary experience,” says the cheerful Lourenco.
Specialising in an array of Goan delicacies, from aromatic chicken Xacutti and spicy chicken cafreal to succulent beef roast and traditional sorpotel, Lourenco’s menu caters to every palate. Not forgetting his vegetarian offerings, which include treats like channa masala, gobi manchurian, and kurma, ensuring there’s something for everyone.
But behind every delectable dish stands a team, and Lourenco receives invaluable support from his wife and two dedicated helpers. Lourenco ensures every detail is meticulously attended to, even if it means burning the midnight oil during busy periods.
“I handle all the shopping required for each order, and the cooking preparations begin a day in advance. Apart from cooking, I also ensure that all the necessary cutlery and utensils are arranged, including spoons, plates, forks, and other dishes, which are packed the day before. This requires a lot of patience and planning, sometimes resulting in sleepless nights to complete the cooking,” he says.
Although formal culinary training eluded him, Lourenco’s passion and dedication have been his greatest teachers. Learning from seasoned cooks like Alleluia and Dona Rosa, he’s carved out his own culinary identity. “Cooking is a gift from God, and I am grateful for the opportunity to share my culinary creations with others,” he quips.
For Lourenco, cooking isn’t just about filling stomachs; it’s about spreading happiness and joy. With a keen eye for hygiene and cleanliness, he ensures his kitchen is a haven of culinary creativity.
